Having a portion of the body text quoted within the Notification requires a few extra operations:
What should happen if the start of the post is actually a quotation from a previous respondent?
Should that get filtered out so as to leave only text which is being freshly added?
What happens if the start of the post is a graphic?
I am well acquainted with someone who quite often does that. 😉

@transparent the main reason I've stayed away from that is because some users have directly replied to the email notification which then gets sent to me via email and isn't posted. So I don't want to encourage that to be honest because even though I've replied to them saying what they've done, they don't want to copy and paste it back into the site... so I figured this was the easiest way not to encourage that - if there's no text there's nothing to reply to.

@editor The email notifications I receive do not contain any body text after the link so this ensures I follow the link to read the text before making any response should I wish to. Do some readers see text in their notifications then? Regards, Toodles.

No but we used to. The last messages I saw before it stopped were about the site having problems and crashing, so I thought the empty emails meant the site wasn't fully working yet. It's only now it's been a few weeks and still it sends empty emails that I came back to look.
I thought it was quite useful to see the message so I could think about the reply while starting up the only browser that this site works in, but if the site operators don't want users to visit so often (to ease the load on the server, maybe?), then that's fine and their choice.

I fail to see any reason why it would be deemed necessary for me to be notified once more concerning a post that I have already seen and read and may have approved.
@mjr you are correct – that's the way it did work. There was an issue with some notifications not taking visitors to the last unread post, and I think that the short code behind this may have caused this. So this, coupled with the fact that users aren't encouraged to reply to what they've seen in the email via email, is beneficial.
Given that the emails appear somewhat minimalistic, I'm considering enhancing their design to make the notifications feel more comprehensive and engaging.

@derek-m it's just the way that the people behind the software coded it. I'll ask them if there's a work around, but there's nothing obvious in the current settings.
